Pear and Date Breakfast Parfait with Almond-Speculoos Granola

Ingredients:

  • Ripe pears 2 ripe pears
  • Dates 4 dates, pitted
  • Oil roasted almonds 50 grams of oil roasted almonds, chopped
  • Speculoos cookies 25 grams of Speculoos cookies
  • Greek yogurt 2 cups of Greek yogurt
  • Honey 1 tablespoon of honey
  • Mint leaves Fresh mint leaves for garnish

The Process

Dice the pears into small pieces and chop the dates. Set aside.

Crush the Speculoos cookies into a crumble using a food processor or by placing them in a ziplock bag and using a rolling pin.

Combine the crushed Speculoos cookies and chopped almonds in a bowl to make your almond-Speculoos granola.

In serving glasses or bowls, layer the Greek yogurt, diced pears, chopped dates, and almond-Speculoos granola. Repeat the layers until the glass is filled.

Drizzle a bit of honey over the top of each parfait and garnish with fresh mint leaves.
