Ingredients:
4 cod fillets
1 medium celeriac, peeled and cubed
1 ripe avocado
Juice and zest of 2 oranges
1/2 cup roasted peanuts, crushed
4 tablespoons butter
Fresh herbs (such as parsley, chives, or tarragon)- Salt and pepper to taste
The Process

prepare puree
Boil the celeriac until tender, then drain and transfer to a blender. Add the avocado, orange juice, and zest. Blend until smooth, adding a little water if necessary. Season with salt and pepper.

prepare cod
Season the cod fillets with salt and pepper. In a large skillet, heat 2 tablespoons of butter over medium-high heat. Sear the cod fillets until golden brown on both sides and cooked through, about 4-5 minutes per side.

herb butter
In a separate pan, melt the remaining 2 tablespoons of butter over medium heat. Add the fresh herbs and cook until fragrant. Drizzle the herb butter over the cod fillets.

serve
To serve, spoon a generous amount of the orange celeriac puree onto each plate. Place the pan-seared cod on top and sprinkle with the crushed roasted peanuts.
